I've been told it doesn't realy matter, as long as the leaves an so get a chance to dry up. If the plants themselves stay wet it can cause fungus and rot. I water when the sun doesn't hit the plants and when I have time for it. Often in the eavening sometimes at night.

Don't remember whome said it, but the expression "Water in the afternoon, & spectacularly replace the plant next week" comes to mind. It's especially important for
Phalaenopsis to have a dry crown going into evening. In reality avoid geting water in the crown in any event, but do water them in the AM to avoid the dangerously dreaded crown rot.
