spider or octopus orchid

I have an orchid that had yellow/green blooms that have fairly long tendrils on the blooms. I faintly remember it being called either a spider orchid or an octopus orchid. I would like to identify it as I finally have a new stalk with new buds but never cut down the old stalk. Questions: should I cut the old stalk? and should I put a support "stick" on the new stalk?
